Most kitchens have a drawer with four or five knives in it. Most of those knives are blunt. The drawer fills up because each knife stopped working and was replaced, never quite discarded, until the collection is an archive of the same problem at different stages. A cheap knife is made from steel that is too soft to hold an edge. The relevant measure is hardness on the Rockwell C scale. A typical supermarket chef knife runs at around 52 to 54 HRC. Steel at that hardness bends under pressure rather than chipping. This makes it safe to manufacture and unlikely to shatter. It also means the edge rolls quickly, dulling in weeks rather than months. More important: when it dulls, it cannot be properly resharpened. A whetstone cuts a new bevel by removing steel. Soft steel does not hold the bevel once set. You sharpen it and it goes blunt again within the week. The economics work out badly for cheap knives. A EUR 20 knife needing replacement every two to three years costs EUR 100 over a decade, and the performance is poor throughout. The G-2 is a monosteel knife. The blade and handle are made from a single piece of Cromova 18 stainless steel, a proprietary alloy with 18 per cent chromium developed by Global. There is no bolster and no separate handle material. The handle is hollow and weighted with sand to balance the knife at the point where blade meets handle. The result is a knife that is noticeably lighter and better balanced than most European chef knives of the same length.
The edge is ground at 15 degrees per side, five degrees sharper than the Fibrox. When both knives are properly maintained, this difference is perceptible. The Tojiro DP is the only knife in this comparison where the steel itself is meaningfully different from the others. The blade uses a VG-10 core, a Japanese high-carbon stainless alloy with added cobalt and vanadium, hardened to 60 to 61 HRC. The core is clad on both sides with softer stainless steel in a san-mai construction, which adds corrosion resistance and absorbs impact that would otherwise stress the harder core directly.
At 60 to 61 HRC, VG-10 takes a finer edge than either the Fibrox or the G-2 and holds it longer between sharpening sessions. The trade-off is brittleness. Hard steel chips rather than rolls when subjected to lateral stress or impact on hard material. The Tojiro is not the right knife to use on frozen food, on bones, or with the tip used as a prying tool. Used for what it is designed for – prep work on normal fresh ingredients – it outperforms both other knives in this comparison and costs only EUR 10 more than the Global G-2.

Which one to buy
The Fibrox is the right knife for most readers. It is the one most likely to be used daily, maintained reasonably well, and still functional in twenty years. The steel alloys, the forging presses, the skilled factory workers who maintain the grinding lines, and the quality control systems behind a Victorinox or a Tojiro are priced today as though production costs are stable.
